A comforting, smoky, and hearty chili made with dark beer and chipotle peppers. This easy-to-make recipe balances heat with depth, creating a soul-soothing meal perfect for cold nights.

  • 1.5 lbs ground beef (80/20 fat ratio)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 tbsp olive oil or vegetable oil
  • 12 oz dark beer (stout or porter)
  • 23 chipotle peppers in adobo, minced
  • 1 tbsp adobo sauce from the can
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 can (15 oz) tomato sauce (no salt added)
  • 2 tbsp tomato paste
  • 1 cup beef broth (low sodium)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 1 square (1 oz) semi-sweet dark chocolate
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Heat oil in a Dutch oven over medium heat. Add diced onion and red bell pepper; cook until softened and translucent (about 5 minutes). Add minced garlic and cook for 1 minute until fragrant.
  2. Add ground beef to the pot. Break it up with a wooden spoon and cook until no pink remains. Drain excess fat if necessary, leaving some for flavor.
  3. Add chili powder, cumin, smoked paprika, and oregano to the meat. Stir constantly for 1-2 minutes to toast the spices and release their oils.
  4. Pour in the dark beer, scraping the bottom of the pot to release browned bits. Add tomato paste, tomato sauce, beef broth, minced chipotle peppers, and adobo sauce. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30 minutes.
  6. Stir in black beans and frozen corn. Uncover and simmer for another 10 minutes until the corn is cooked and the chili has thickened slightly.
  7. Remove from heat. Stir in the dark chocolate and apple cider vinegar until the chocolate melts. Taste and adjust salt and pepper as needed.

Notes

Chili tastes better the next day as flavors meld. If the chili is too thin, simmer uncovered for an extra 10 minutes. If too thick, add a splash of broth. For a vegetarian version, swap beef for lentils or extra beans. Use low-sodium broth and tomato sauce to control sodium intake.
