  • 1 tablespoon Baking Powder

  • 1/2 cup (115g) Unsalted Butter, cold and cubed
  • 3/4 cup (180ml) Heavy Cream, cold
  • 1 pound (450g) Fresh Strawberries, hulled and sliced
  • 2 tablespoons Granulated Sugar (for berries)
  • 1 teaspoon Lemon Juice
  • 1 cup (240ml) Heavy Whipping Cream, cold
  • 2 tablespoons Confectioners’ Sugar
  • 1/2 teaspoon Vanilla Extract

Instructions

  1. Hull and slice strawberries. Toss with 2 tablespoons sugar and lemon juice. Let sit at room temperature for 15 minutes to macerate.
  2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. In a large bowl, whisk together flour, 2 tablespoons sugar, baking powder, and salt.
  4. Cut in the cold cubed butter using a pastry blender or food processor until the mixture resembles coarse crumbs with pea-sized butter pieces.
  5. Pour in cold heavy cream and stir gently until the dough just comes together. Do not knead.
  6. Turn dough onto a floured surface, pat into a 1-inch thick circle, and cut with a 2.5-inch round cutter. Place biscuits on the baking sheet, 1 inch apart.
  7. Bake for 12-15 minutes until golden brown and firm to the touch.
  8. While biscuits bake, whip heavy cream, confectioners’ sugar, and vanilla until stiff peaks form.
  9. Slice cooled biscuits in half horizontally. Assemble by placing bottom half on plate, topping with macerated berries and juices, adding whipped cream, and capping with the top half.

Keep all ingredients cold to ensure flaky biscuits. Do not overwork the dough. Use fresh baking powder for best rise. For dairy-free, use coconut cream and vegan butter. For gluten-free, use a 1:1 gluten-free flour blend.
