A tender, moist, and flavorful spice cake with cream cheese frosting that is quick to make and perfect for fall gatherings.

Ingredients

Scale
  • 1 1/2 cups All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Ginger
  • 1/4 tsp Cloves
  • 1/2 cup Unsalted Butter, softened
  • 1 cup Sugar (mix of white and brown)
  • 2 Large Eggs, room temperature
  • 1 tsp Vanilla Extract
  • 8 oz Full-fat block Cream Cheese, softened
  • 1 cup Powdered Sugar, sifted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and cloves.
  3. In a large bowl, beat softened butter and sugars together until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Pour batter into prepared pan. Bake for 25-30 minutes (round pan) or 35-40 minutes (loaf pan) until a toothpick comes out clean.
  7. Let cake cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. While cake cools, beat softened cream cheese and powdered sugar together until smooth. Add vanilla and mix until creamy.
  9. Spread frosting over the cooled cake. Slice and serve.

Notes

Ensure eggs and cream cheese are at room temperature for best texture. Use full-fat block cream cheese, not spreadable tubs, to prevent runny frosting. For gluten-free version, use a 1:1 gluten-free flour blend with xanthan gum. For dairy-free, use vegan butter and cream cheese.
