A smooth, aromatic homemade pumpkin spice syrup made with simple ingredients. This recipe avoids burning by using low heat and adding spices at the end, resulting in a perfect balance of sweetness and fall flavors.

  • 1 cup water (240ml)
  • ½ cup pumpkin puree (120g) – 100% pure, not pie filling
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  1. Combine sugar and water in a medium saucepan over medium heat. Stir gently until sugar is completely dissolved (about 2-3 minutes). Do not boil yet.
  2. Reduce heat to low. Add pumpkin puree and whisk vigorously until the mixture is mostly smooth.
  3. Add ground cinnamon, ginger, nutmeg, cloves, and salt. Whisk to distribute spices evenly.
  4. Simmer gently on low heat for 5-7 minutes, stirring frequently to prevent sticking or burning. Do not let it come to a rolling boil.
  5. Remove from heat and immediately stir in vanilla extract.
  6. Optional: Strain through a fine-mesh sieve for a perfectly smooth texture.
  7. Let cool to room temperature before storing. It will thicken further as it cools.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling. Keep heat low to prevent the pumpkin sugars from burning. The syrup will thicken as it cools. Store in the refrigerator for up to two weeks. Can be frozen in ice cube trays for longer storage.
