A homemade pumpkin spice concentrate that captures the warm, earthy flavors of autumn without artificial additives. This easy-to-make syrup turns cold brew or milk into a rich, spiced beverage.

  • 1 cup pumpkin puree (canned, not pie filling)
  • 1 cup brown sugar (dark or light)
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 2 whole cinnamon sticks
  • 1 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cardamom
  • A pinch of black pepper

Instructions

  1. Combine water, brown sugar, and pumpkin puree in a medium saucepan. Whisk gently until sugar is mostly dissolved.
  2. Add cinnamon sticks, ginger, nutmeg, cardamom, and black pepper. Stir to distribute spices evenly.
  3. Place saucepan over medium heat and bring to a gentle simmer. Do not boil.
  4. Reduce heat to low and simmer for 10-15 minutes, stirring occasionally, until the mixture thickens slightly and becomes fragrant.
  5. Remove from heat and stir in vanilla extract.
  6. Let the concentrate sit in the pot for 10 minutes to allow spices to infuse.
  7. Strain the liquid through a fine-mesh sieve into a bowl or jug, pressing on solids to extract flavor. Discard solids.
  8. Let the concentrate cool to room temperature.
  9. Pour into airtight glass bottles or mason jars and refrigerate for at least 2 hours before using.
  10. To serve, mix 2-3 tablespoons of concentrate with 1 cup of cold brew coffee or milk. Adjust to taste.

Notes

Use pure pumpkin puree, not pumpkin pie filling. Store in the refrigerator for up to 3 weeks. Shake well before use as spices may settle. Can be frozen for up to 3 months. For a dairy-free creaminess, serve with oat milk or almond milk.
