  • 1 can (15 ounces) pure pumpkin puree
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt (plus more to taste)
  • Black pepper to taste
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (14.5 ounces) diced tomatoes, no salt added
  • 1 medium green bell pepper, diced
  • Splash of olive oil for sautéing

Instructions

  1. Dice the onion, bell pepper, and mince the garlic.
  2. Heat a large pot or Dutch oven over medium heat with a splash of olive oil.
  3. Add the diced onion and bell pepper; cook for 3-4 minutes until softened and translucent.
  4. Add the garlic and cook for the last 30 seconds until fragrant.
  5. Add the ground turkey and break it up with a wooden spoon; cook for 5-7 minutes until no pink remains. Drain excess grease if necessary.
  6. Sprinkle cumin, chili powder, cinnamon, smoked paprika, salt, and pepper over the meat. Stir constantly for 1 minute to bloom the spices.
  7. Pour in the chicken broth, pumpkin puree, diced tomatoes (with juices), and rinsed black beans. Stir until well combined.
  8. Bring the mixture to a gentle boil, then reduce heat to low. Simmer uncovered for 10-15 minutes, stirring occasionally, until the chili thickens.
  9. Taste and adjust seasoning with more salt or pepper if needed. Add a splash of broth if too thick.

Notes

Ensure you use pure pumpkin puree, not pumpkin pie filling, which contains added sugars. For best results, brown the turkey properly to develop flavor, and bloom the spices in the fat before adding liquids. The chili will thicken as it cools due to the pumpkin puree.
