A simple, spiced apple cider made by simmering whole apples with cinnamon, cloves, and orange. This recipe respects the natural flavor of the fruit, creating a warm, comforting drink perfect for quiet evenings.

  • 6 to 8 medium apples (mix of Honeycrisp and Granny Smith), quartered and cored, skins on
  • 8 cups water
  • 1 large orange, sliced into rounds
  • 3 to 4 whole cinnamon sticks
  • 6 to 8 whole cloves
  • 1 star anise pod
  • 1 whole nutmeg or 1/2 teaspoon freshly grated nutmeg
  • Honey or maple syrup, to taste (optional)

Instructions

  1. Wash apples thoroughly. Remove cores and quarter into rough chunks; do not peel.
  2. Place apple chunks, water, orange slices, cinnamon sticks, cloves, star anise, and nutmeg into a large heavy-bottomed pot.
  3. Stir gently to submerge the fruit.
  4. Turn heat to medium-high and bring mixture to a boil.
  5. Immediately reduce heat to low to maintain a gentle simmer. Do not boil vigorously.
  6. Simmer uncovered for 45 minutes to 1 hour, stirring occasionally, until apples soften and liquid darkens to a burnt amber color.
  7. Turn off heat and let the pot sit with the lid slightly ajar for 30 minutes to steep.
  8. Strain the cider through a fine-mesh strainer or cheesecloth into a bowl, pressing gently on apples to extract juice but leaving pulp behind. Discard solids.
  9. Taste and add honey or maple syrup if desired.
  10. Warm mugs and pour cider. Garnish with a cinnamon stick or orange slice.

Notes

Leave apple skins on for color and pectin. Use fresh spices for best aroma. Low and slow simmering prevents bitterness and cloudiness. Cider keeps for up to 5 days in the fridge or 3 months in the freezer (omit orange slices before freezing). For a boozy version, add bourbon or rum to individual mugs.
