A convenient, no-cook breakfast made with pumpkin puree, rolled oats, and spices that tastes like dessert but is packed with fiber and protein.

  • 1/2 cup Old-Fashioned Rolled Oats
  • 1/4 cup Pumpkin Puree (100% pure, not pie filling)
  • 1/2 cup Milk of choice (dairy or non-dairy)
  • 1/4 cup Greek Yogurt (plain)
  • 12 tablespoons Maple Syrup
  • 1 teaspoon Pumpkin Pie Spice
  • 1/2 teaspoon Vanilla Extract
  • A pinch of Salt

Instructions

  1. Add 1/2 cup old-fashioned rolled oats, 1 teaspoon pumpkin pie spice, and a pinch of salt to a mason jar or container.
  2. Add 1/4 cup pumpkin puree, 1/2 cup milk, 1/4 cup Greek yogurt, maple syrup, and vanilla extract to the jar.
  3. Stir vigorously with a spoon until the mixture is uniform, creamy, and free of pumpkin lumps.
  4. Seal the jar with its lid and place it in the refrigerator for at least 4 hours, preferably overnight (6-8 hours).
  5. In the morning, stir the oats. If too thick, add a splash of milk. If too runny, it is still edible but less pudding-like.
  6. Serve cold straight from the jar, optionally topped with extra cinnamon, pecans, or pumpkin seeds.

Notes

Do not use steel-cut oats as they will not soften. Ensure you use pure pumpkin puree, not pumpkin pie filling. The oats will continue to absorb liquid after refrigeration, so adjust milk accordingly. Best eaten within 2 days for optimal texture, though it lasts up to 4 days in the fridge.
