A make-ahead breakfast casserole that combines browned sausage, sharp cheddar cheese, and bread soaked in an egg custard mixture. This recipe allows you to prepare the dish the night before for a stress-free, delicious morning meal.

  • 1 cup whole milk
  • 4 cups cubed bread (day-old baguette, sourdough, or white sandwich bread)

Instructions

  1. Brown the sausage in a large skillet over medium heat, breaking it into small pieces. Drain excess grease if necessary and transfer to a plate.
  2. Cube the bread into 1-inch pieces and place them in a 9×13 inch baking dish.
  3. In a large mixing bowl, whisk the eggs, milk, salt, and pepper until uniform and slightly frothy.
  4. Sprinkle the browned sausage and shredded cheddar cheese evenly over the bread cubes.
  5. Pour the egg mixture over the ingredients. Gently press down on the bread to ensure all cubes are submerged in the liquid.
  6. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 8 hours or overnight.
  7. Preheat the oven to 350°F (175°C). Remove the plastic wrap from the dish.
  8. Bake for 35-40 minutes until the top is golden brown and puffed, and a knife inserted into the center comes out clean.
  9. Let the casserole rest for 5 minutes before slicing and serving.

Notes

Day-old bread works best as it absorbs the egg mixture without turning to mush. Ensure all bread is submerged in the liquid to prevent dry spots. The overnight soak is crucial for the custard-like texture. If the top browns too quickly, cover loosely with foil for the last 10 minutes of baking.
