Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together 1 ½ cups flour, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In a large bowl, whisk melted butter, granulated sugar, brown sugar, eggs, and vanilla until smooth. Add pumpkin puree and whisk until incorporated.
  4. Fold dry ingredients into wet ingredients until just combined; do not overmix.
  5. In a separate bowl, beat softened cream cheese, ¼ cup sugar, egg yolk, and vanilla until smooth and creamy. Refrigerate briefly.
  6. In a small bowl, combine ½ cup flour, ¼ cup brown sugar, cinnamon, and cold cubed butter using a pastry cutter until it resembles coarse sand.
  7. Divide pumpkin batter evenly among muffin cups, filling halfway.
  8. Drop a heaping tablespoon of cheesecake batter onto the center of each muffin.
  9. Gently swirl the cheesecake into the pumpkin batter with a knife or offset spatula to create ribbons.
