  • 2 tbsp unsalted butter
  • 1 medium yellow onion, diced
  • 34 garlic cloves, minced
  • 2 large russet potatoes, peeled and diced into ½-inch cubes
  • 4 cups chicken or vegetable broth (low-sodium)
  • ½ cup heavy cream
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried thyme
  • Black pepper to taste
  • Red pepper flakes (optional)
  • Salt to taste

Instructions

  1. Prep ingredients: Dice potatoes, onion, and mince garlic. Crumble sausage into small pieces.
  2. Brown the sausage in a large Dutch oven or pot over medium-high heat. Break up meat and cook until crispy and browned. Remove with a slotted spoon, leaving rendered fat in the pot.
  3. Reduce heat to medium. Add butter to the pot. Once melted, add onions and cook until translucent (3-4 minutes). Add garlic in the last minute.
  4. Sprinkle in dried thyme, black pepper, and red pepper flakes. Stir to coat in fat and bloom the spices.
  5. Add diced potatoes to the pot and stir to coat. Pour in broth, scraping the bottom to release fond. Bring to a boil.
  6. Reduce heat to low, cover partially, and simmer for 15-20 minutes until potatoes are fork-tender.
  7. Use a potato masher to mash about one-third of the potatoes directly in the pot to thicken the soup.
  8. Stir in the cooked sausage and heavy cream. Simmer gently for 2-3 minutes to heat through.
  9. Taste and adjust seasoning with salt and pepper. Stir in fresh parsley before serving.

Notes

For a dairy-free version, swap butter for olive oil and heavy cream for coconut cream. To freeze, omit the cream before freezing; stir in fresh cream upon reheating. If the soup separates, ensure you do not boil it vigorously after adding the cream. For a thicker soup without cream, mash more potatoes or use a cornstarch slurry.
