A comforting, one-pot soup that uses potato starch instead of heavy cream to create a velvety texture. Packed with savory Italian sausage, tender russet potatoes, and wilted kale, this dish is quick, easy, and perfect for busy weeknights.

Ingredients

  • 1 medium yellow onion, finely diced
  • 34 cloves garlic, minced
  • 6 cups chicken or vegetable broth (low-sodium)
  • 2 tablespoons butter
  • 3 large russet potatoes, peeled and cut into 1/2-inch cubes
  • 1/2 cup dry white wine (optional, or substitute with extra broth and lemon juice)
  • 1 large bunch Lacinato kale, stems removed and leaves chopped into ribbons
  • 1/2 cup heavy cream or full-fat coconut milk (optional, for finishing)
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prep ingredients: Peel and cube potatoes, mince garlic, dice onion, remove sausage from casing, and chop kale.
  2. In a large Dutch oven or pot over medium-high heat, cook the sausage, breaking it up with a wooden spoon until browned and crispy. Remove sausage with a slotted spoon and set aside, leaving rendered fat in the pot.
  3. Reduce heat to medium. Add butter to the pot. Add onions and a pinch of salt; cook until translucent. Add garlic and cook for 30 seconds until fragrant.
  4. Pour in white wine (or extra broth) and scrape up browned bits from the bottom. Add cubed potatoes and remaining broth. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until potatoes are fork-tender.
  5. Remove lid. Mash one-third to one-half of the potatoes directly in the pot to release starch and thicken the soup naturally.
  6. Stir in chopped kale and cooked sausage. Simmer for 2-3 minutes until kale is wilted and tender.
  7. Remove from heat. Stir in cream or coconut milk if using. Taste and adjust seasoning with salt and pepper. Serve hot with crusty bread.
