A hearty, weeknight-friendly chili that uses blended white beans to create a rich, velvety texture without heavy cream. Packed with lean turkey, sweet corn, and warming spices, this dish is healthy, affordable, and perfect for meal prep.

  • 1 tablespoon extra virgin olive oil
  • 1 medium yellow onion, diced
  • 1 large red bell pepper, diced
  • 34 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 2 cups low-sodium chicken broth
  • 1 (14.5-ounce) can diced tomatoes (undrained)
  • 2 (15-ounce) cans cannellini or great northern beans, rinsed and drained
  • 1 cup frozen corn
  • 1 teaspoon salt (or to taste)
  • Black pepper (to taste)
  • Greek yogurt (for serving)
  • Fresh cilantro, chopped (for serving)
  • Lime wedges (for serving)

Instructions

  1. Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.
  2. Add diced onion and red bell pepper; sauté for 4-5 minutes until soft and translucent.
  3. Add minced garlic and cook for 1 minute, stirring constantly to prevent burning.
  4. Add ground turkey and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain excess fat if necessary.
  5. Sprinkle in cumin, chili powder, smoked paprika, and oregano; stir to coat the meat.
  6. Add tomato paste and stir for 1 minute to deepen the flavor.
  7. Pour in chicken broth and diced tomatoes with their juices; scrape the bottom of the pot to release browned bits.
  8. Bring the mixture to a gentle boil, then reduce heat to low and simmer uncovered for 15 minutes.
  9. Use an immersion blender to blend approximately 1 cup of the chili directly in the pot until smooth (or blend in batches in a regular blender).
  10. Add the rinsed white beans and frozen corn to the pot; stir well.
  11. Simmer for another 10 minutes until beans are heated through and corn is softened.
  12. Taste and adjust seasoning with salt and pepper. Add more broth if too thick.
  13. Ladle into bowls and serve topped with Greek yogurt, fresh cilantro, and a squeeze of lime.

Notes

For a vegetarian version, substitute vegetable broth and add extra beans or mushrooms. For dairy-free, skip the Greek yogurt and use avocado or coconut yogurt. The chili tastes even better the next day as flavors meld. It can be frozen for up to 3 months.
