  • 1 package phyllo dough, thawed
  • 1/2 cup pomegranate arils (fresh or frozen/thawed)
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon fresh thyme leaves, chopped
  • 1/4 teaspoon black pepper
  • Flaky sea salt (e.g., Maldon)

Instructions

  1. Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C).
  2. Unroll phyllo dough and keep covered with a damp towel. Cut each sheet in half lengthwise.
  3. In a small bowl, mix goat cheese, chopped thyme, and black pepper until smooth.
  4. Take a half-sheet of phyllo and brush lightly with melted butter.
  5. Place a 1-teaspoon dollop of cheese mixture in the center, topped with a few pomegranate arils.
  6. Fold the sides of the phyllo over the filling to create a sealed packet.
  7. Place packets on a parchment-lined baking sheet and brush tops generously with melted butter.
  8. Bake for 8-10 minutes until golden brown and puffed.
  9. Remove from oven, drizzle with maple syrup or honey, and sprinkle with flaky sea salt.
  10. Let cool for 2 minutes before serving.

Notes

Keep phyllo dough covered with a damp towel while working to prevent cracking. Ensure goat cheese is cold until assembly to prevent melting too quickly. Do not overfill the bites to avoid bursting. If using an air fryer, cook in batches to avoid overcrowding.
