A simple, crunchy, and savory snack made by roasting raw pumpkin seeds with olive oil, chili powder, garlic, and fresh lime zest. Perfect for game nights or quick cravings.

  • 2 cups raw shelled pumpkin seeds (pepitas)
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin (optional)
  • 1 teaspoon coarse sea salt, divided
  • Zest of 1 medium lime
  • 1 tablespoon fresh lime juice

Instructions

  1. Preheat oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper or a silicone mat.
  2. If using fresh seeds, rinse thoroughly to remove pulp. If using store-bought, give them a quick rinse. Pat seeds extremely dry with paper towels and let air dry for 15 minutes if damp.
  3. In a large mixing bowl, toss the dried seeds with olive oil until lightly and evenly coated.
  4. Sprinkle in chili powder, garlic powder, cumin (if using), and half of the salt. Toss vigorously until every seed is speckled with spice.
  5. Spread seeds in a single layer on the baking sheet. Do not overlap.
  6. Roast for 15-20 minutes, stirring every 5 minutes to ensure even browning. Seeds should be golden and nutty smelling.
  7. Check for doneness: seeds should be crispy to the bite but still look slightly soft. They will crisp up more as they cool.
  8. While seeds are still hot, transfer to a clean bowl. Immediately sprinkle lime zest, remaining salt, and lime juice over them.
  9. Spread seeds back onto a cooling rack or clean baking sheet. Let cool completely for at least 10 minutes to achieve maximum crunch.
  10. Taste and add more salt or chili if needed. Serve at room temperature.
