  • 1 pint heavy whipping cream (very cold)
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 2 cups fresh or frozen mixed berries (strawberries, raspberries, blueberries, blackberries)
  • 2 cups cold whole milk (for pudding)

Instructions

  1. Chill a large glass or metal mixing bowl and beaters in the freezer or fridge for at least 30 minutes.
  2. Rinse fresh berries and pat dry, or keep frozen berries semi-frozen.
  3. In a separate medium bowl, whisk the instant vanilla pudding mix with 2 cups of cold milk for about 2 minutes until thickened and smooth. Set aside.
  4. Pour the cold heavy cream into the chilled bowl. Whip on medium speed, increasing to high, until stiff peaks form (about 2-4 minutes). Do not over-whip.
  5. Stir about one-third of the whipped cream into the pudding to lighten it.
  6. Gently fold the pudding mixture back into the remaining whipped cream using a rubber spatula until just combined.
  7. Gently fold in the mixed berries, being careful not to burst them.
  8. Transfer to serving dishes or individual glasses. Refrigerate for at least 15 minutes before serving to allow flavors to meld.
  9. Top with extra whole berries for garnish if desired.

Notes

Ensure all equipment is very cold to help the cream whip properly. If using frozen berries, do not thaw completely before adding to prevent mushiness. For a gluten-free option, check that the pudding mix is certified gluten-free. Do not freeze this dessert as the texture will become grainy upon thawing.
