A simple, healthy side dish featuring tender delicata squash slices roasted with olive oil, maple syrup, and fresh thyme for a perfect balance of savory and sweet.

Ingredients

  • 2 medium delicata squash
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons pure maple syrup
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon garlic powder
  • A pinch of red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash the delicata squash thoroughly. Slice in half crosswise, then slice each half into 1/2-inch thick half-moon shapes. Remove seeds if desired.
  3. Place squash slices in a large mixing bowl. Drizzle with olive oil and sprinkle with salt, black pepper, and garlic powder. Toss gently to coat evenly.
  4. Line a large sheet pan with parchment paper. Arrange squash slices in a single layer without overlapping.
  5. Roast in the preheated oven for 20 minutes, or until tender when pierced with a fork.
  6. In a small bowl, mix maple syrup and fresh thyme leaves. Remove pan from oven and brush the mixture generously over the hot squash.
  7. Return to oven and roast for another 10-15 minutes until the maple bubbles and caramelizes.
  8. Sprinkle with red pepper flakes. Let cool for 5 minutes before serving.

Notes

Do not crowd the pan to ensure caramelization rather than steaming. The skin is edible and does not need to be peeled. If the maple syrup smokes, lower the oven temperature to 375°F (190°C) for the second round. Store leftovers in an airtight container in the refrigerator for up to 4 days.
