  • 2 medium ripe pears (e.g., Bartlett or Bosc), peeled if thick-skinned and cubed
  • 1 cup fresh cranberries (whole or lightly crushed)
  • 12 cups ripe persimmons (peeled and chopped) or figs (quartered)
  • 1/2 cup pomegranate arils
  • 34 tablespoons fresh lime juice
  • 2 tablespoons raw honey
  • 1 tablespoon extra virgin olive oil (optional)
  • 1 tablespoon finely chopped mint or basil
  • Pinch of sea salt

Instructions

  1. Wash all fruit thoroughly and pat dry. Core apples and pears, then cut into uniform, bite-sized cubes. Peel persimmons if necessary and chop; quarter figs.
  2. In a small bowl, whisk fresh lime juice and honey vigorously until the honey is completely dissolved.
  3. Stir in olive oil, chopped herbs, and a pinch of sea salt. Taste and adjust sweetness or acidity if needed.
  4. Place chopped fruit in a large mixing bowl. Pour about three-quarters of the dressing over the fruit and gently toss to coat evenly.
  5. Add cranberries and pomegranate arils last, tossing lightly to avoid crushing them.
  6. Let the salad rest for at least 5 minutes to allow flavors to meld. Add remaining dressing if needed and serve immediately or chill for up to 2 hours.

Notes

For best texture, store dressing and fruit separately until ready to serve. Avoid using overripe fruit as it will turn mushy. Do not freeze this salad as the high water content will cause it to become soggy upon thawing. If making ahead, chop fruit and store in water with lemon juice, draining and drying before adding dressing.
