A simple yet sophisticated grilled peach salad featuring charred ripe peaches, salty feta cheese, fresh mint, and a drizzle of honey. It’s a quick, healthy, and crowd-pleasing dish perfect for summer evenings.

  • 4 medium ripe peaches
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey

Instructions

  1. Preheat grill to medium-high heat (approx. 400°F/200°C) and clean grates thoroughly.
  2. Wash and pat dry peaches. Slice each peach in half lengthwise and remove the pit.
  3. Brush both sides of each peach half with half of the extra virgin olive oil.
  4. Place peaches cut-side down on the grill. Do not move for 2 minutes to create char marks.
  5. Check for char, then flip and grill for 2-3 more minutes on the flat side until tender but not mushy. Remove and let cool slightly.
  6. In a mixing bowl, combine grilled peach halves, crumbled feta, and chopped mint.
  7. Drizzle with remaining honey and toss gently to combine without breaking the peaches.
  8. Serve immediately while peaches are still warm.

Notes

Ensure peaches are ripe but firm enough to hold shape on the grill. Pat peaches dry before oiling to ensure proper charring. If you don’t have a grill, you can use a grill pan or oven broiler. Taste before adding extra salt as feta is already salty.
