Quick No-Bake Peanut Butter Oat Energy Bites - featured image

A simple, 5-ingredient no-bake snack made with peanut butter, oats, honey, and chocolate chips. Perfect for busy weeknights, pre-workout fuel, or late-night cravings.

Ingredients

Scale
  • 1 ½ cups old-fashioned rolled oats
  • ½ cup creamy natural peanut butter
  • ⅓ cup honey
  • 1 tsp vanilla extract
  • ½ cup mini chocolate chips
  • 2 tbsp flaxseeds (optional)

Instructions

  1. Gather and measure all ingredients.
  2. In a large bowl, combine peanut butter and honey. Microwave for 10-15 seconds if peanut butter is stiff to soften it. Stir in vanilla extract until smooth.
  3. Add rolled oats and flaxseeds (if using) to the wet mixture. Stir vigorously until oats are completely coated and the mixture resembles damp sand.
  4. Gently fold in mini chocolate chips.
  5. Cover the bowl with plastic wrap and chill in the refrigerator for at least 15-20 minutes to firm up the mixture.
  6. Scoop about a tablespoon of mixture and roll into balls between your palms. If sticky, wet hands slightly with water. Place on a parchment-lined baking sheet.
  7. Place the baking sheet in the freezer for 30 minutes to set completely.
  8. Transfer to an airtight container or freezer bag for storage.

Notes

If the mixture is too wet after chilling, add another tablespoon of oats. If too dry, add a teaspoon of honey or water. Keep a small bowl of water nearby to wet hands if the mixture sticks while rolling. Natural peanut butter should be stirred well before measuring.
