  • ½ cup (128g) Natural Peanut Butter
  • ⅓ cup (120ml) Honey
  • ½ cup (50g) Protein Powder (Vanilla or Chocolate)
  • ½ cup (85g) Mini Chocolate Chips
  • 1 tsp Vanilla Extract
  • ¼ tsp Salt
  • 2 tbsp (15g) Flaxseed Meal

Instructions

  1. Prepare your workspace by grabbing a large mixing bowl.
  2. Combine dry ingredients: Add rolled oats, protein powder, flaxseed meal, and salt to the bowl. Whisk together to ensure no clumps.
  3. Add wet ingredients: Pour in natural peanut butter, honey, and vanilla extract. If peanut butter is stiff, microwave for 10-15 seconds to soften.
  4. Mix thoroughly: Use a silicone spatula or wooden spoon to mix until a uniform, sticky dough forms. Adjust consistency with more honey if too dry or more oats if too wet.
  5. Fold in chocolate chips: Distribute mini chocolate chips evenly throughout the mixture.
  6. Chill the mixture (Optional): Refrigerate for 15-30 minutes to firm up the peanut butter and make rolling easier.
  7. Roll into balls: Take about a tablespoon of dough and roll between palms to form balls. Wet hands slightly if the mixture sticks.
  8. Set in the fridge: Place rolled balls on a plate or baking sheet and refrigerate for at least 2 hours to firm up completely.

Notes

If the mixture is too dry, add more honey or a splash of milk. If it is too wet, add more oats. For nut-free versions, substitute peanut butter with sunflower seed butter. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
