Instructions

  1. Preheat oven to 375°F (190°C).
  2. Arrange tortilla chips in a single layer on rimmed baking sheets, ensuring no overlap.
  3. Sprinkle grated cheddar, Monterey Jack, and Pepper Jack cheese evenly over the chips (approx. 1/3 cup per sheet pan).
  4. Bake for 5-7 minutes until cheese is bubbly and melted but chips are not browned.
  5. While nachos bake, brown ground meat in a skillet, drain excess fat, and stir in taco seasoning with a splash of water; simmer for 5 minutes.
  6. In a separate pot, warm black beans with a pinch of cumin and salt.
  7. Prepare fresh toppings: dice tomatoes, slice green onions, jalapeños, and avocado, and chop cilantro; place each in separate serving bowls.
  8. Remove hot nachos from oven and place on a large table or counter.
  9. Arrange bowls of toppings around the hot cheese chips.
  10. Add warm meat and beans in separate bowls or directly on chips.
  11. Serve immediately, allowing guests to build their own nachos and add cold toppings after melting the cheese.
